Deep Water 200-300ft
Yellow Eye Snapper is excellent to eat. It has flaky white meat that is sweet, yet mild in flavor. Many anglers swear that Yellow Eye Snapper is the best-tasting fish in the ocean.

Queen Snapper is similar to Red Snapper–sweet, extra mild and with a moist texture.
Yellowtail snapper filet is buttery, flakey and has a mild flavor similar to Grouper. Due to these flavor and economic characteristics, Yellowtail Snapper filet is highly-prized by countless South Floridians.
Fireback Grouper has a mild, but very unique flavor; somewhat of a cross between Bass and Halibut. The meat cooks up firmly, with big flakes and holds its moisture better than many other fish.
Black Grouper has a mild but very unique taste. It is available year-round with the peak catches occurring during the summer and fall in the Atlantic and Gulf of Mexico. Deep Water 800-1200ft
A deepwater species, Mystic Grouper can be found from South Florida through the Bahamas in depths of 500 feet or more. Mystic Grouper prefer hard, rocky bottoms and ledges.
Deep Water 200-3000ft
A cousin of Grouper and Bass, Wreckfish was first harvested by accident in the South Atlantic in the early 1980's.
Tripletail hang out around floating debris from shallow-deep blue water.
The flesh is firm and white with flaky, sweet meat.
Cobia is diffiult to find. It migrates from Virginia Beach in summer and from the Gulf of Mexico in winter. The best thing about this variety is the flavor—it has a natural, buttery mild taste that's unlike any other fish.
Deep Water up to 1200 ft
The aroma of a John Dory is light with subtle hints of seaweed. The flesh is firm and smooth with a slight stickiness. John Dory have a robust, slightly milky flavor.
Deep water 300-1000ft
Somewhat similar to tuna, it is a mild-flavored fish gaining in popularity. Its fatty flesh offers versatility of use.
Hogfish meat is very white with almost no bloodline. It has a shellfish flavor.
